Ingredients:
***Chicken***
2 tablespoons vegetable oil
4 (4oz each) chicken breasts
Kosher salt and coarse ground black pepper
***Herb Sauce***
1 tablespoon lime juice
3 tablespoons low-sodium chicken broth
2 teaspoons ginger, finely grated
1/4 cup (packed) fresh basil, snipped
2 tablespoons (packed) fresh mint, torn

Directions:

Heat oil in saute pan over mediun-high heat. Season both sides of chicken breast with salt and pepper. Cook chicken in saute pan about 5 minutes each side until cooked through. Transfer chicken to a plate.

Add the lime juice to the pan and scrape up any browned bits that stuck to the pan with a wooden spoon. Add the chicken broth and ginger. Add the mint and basil and remove from heat. Stir to combine all. Spoon the herb sauce over the chicken and serve.
