It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

2 tablespoons olive oil
1/4 cup balsamic vinegar
5 teaspoons sugar
5 tablespoons ketchup
1 1/2 teaspoon Worcestershire sauce
1 green onion, minced
1/2 teaspoon dry mustard
1/4 teaspoon garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
2 drops hot pepper sauce
6 boneless skinless chicken breast halves
Combine the olive oil, vinegar, sugar, ketchup, Worcestershire sauce, green onion, mustard, garlic, salt, pepper, and hot sauce in a zip-top plastic bag. Seal the bag and massage the ingredients to mix.
Place the chicken breasts in the bag, seal the bag, and turn to coat the chicken in the marinade. Place the bag in the refrigerator and let marinate for 4-24 hours, turning the bag every few hours.
When ready to cook, preheat the grill to medium heat. Remove the chicken from the marinade. Place the chicken on the grill and cook, turning as needed, until cooked through, about 10 minutes total depending on the thickness of the chicken.

Rave reviews from company last night when we made this. It was unbelievably good and we'll use this marinade frequently in the future. My only tip: Be sure to pierce the chicken with a fork multiple times before adding it to the bag of marinade. It really helps to get the flavor throughout.

It's 38oC. with the humidex today and I was looking for a good boneless,skinless chicken breast recipe. Excellent served with fresh string beans from the garden and brown rice.

This was really yummy! It turns out sort of like spicy (not hot) BBQ sauce.
