Grilled Chicken with Plum Honey Sauce

ingredients
4 whole chicken breasts, split
Plum Honey Sauce
5 large round ripe plums
1/4 cup honey, more to taste if desired
1 teaspoon granulated sugar
1 dash salt
fresh grated nutmeg to taste
1 tablespoon butter or margarine
1 tablespoon cornstarch, mixed with a little water to thicken
directions
Marinate chicken with your favorite homemade or bottled Italian vinaigrette in a plastic bag overnight. Drain and grill chicken until well done.
Meanwhile make the plum sauce. Wash plums, remove pits (keep skins on) and coarse chop and place in sauce pot with honey. Bring to a boil and reduce heat. Plums will soften and liquefy. Add sugar, salt, nutmeg to taste and butter.
Blend smooth with hand held blender (or remove mixture and carefully puree in blender or food processor and return to pot). Thicken with some cornstarch. Increase heat to a near boil and whisk sauce until it becomes thick and smooth.
To serve, ladle some plum sauce on a plate. Place on chicken breast and then ladle on some more plum sauce. Accompany with favorite colorful vegetables

This a very good recipe. I added 2 teaspoons of real lemon juice concentrate and we thought that it made it even better.
