Creamy Italian Chicken
INGREDIENTS:
4 boneless skinless chicken breast halves
1 envelope dry Italian salad dressing mix
1/4 cup water
1 package (8 ounce size) cream cheese, softened
1 can (10.75 ounce size) cream of chicken soup, undiluted
1 can (4 ounce size) mushroom stems and pieces, drained
hot cooked rice or pasta
DIRECTIONS:
Place the chicken breast halves in the crock pot. Combine the Italian dressing mix and water until smooth; pour over top of chicken. Cover; cook on low for 3 hours.
Combine the cream cheese and soup until smooth and blended. Stir in mushroom pieces. Pour soup mixture over chicken. Cook 1 hour more or until chicken is cooked through. Serve over hot cooked rice or pasta

I made this recipe for Valentine's Day. I substitued Cream of Mushroom soup for the Cream of Chicken and sliced mushrooms because I had it on hand. I served it over rice and is was delicious! My family and I really enjoyed it and I passed the recipe on!

This is as good as a leftover as it is the first day. I cut the chicken into bite-size pieces after it's cooked and serve it over noodles. Delicious

This was excellent, but on the off chance that someone has a really "hot" crockpot, I really don't think the chicken needs to cook for three hours. It may dry out in that time if it's not sitting in the marinade properly. Use your judgement, but it will cook in less time than that.

I have made this dish several times. It tends to be on the salty side. If you use lite creamcheese and low-sodium soup, you can improve the taste. My teenage son loves to make and eat this one!
