ingredients
1/4 cup margarine
1/4 cup diced red bell pepper
1/4 cup diced celery
1/4 cup thinly sliced green onions
1 pound crawfish tails, peeled
1 cup heavy cream
1/2 teaspoon garlic powder
1/2 teaspoon Cajun seasoning
1/2 teaspoon dried parsley
1/2 cup shredded cheddar cheese
directions
In a saucepan, melt the margarine, add the vegetables and saute until tender. Add the crawfish tails and seasonings. Saute until tender.
Add the cream and allow mixture to reduce for 2 minutes or until thick. Whisk in the garlic powder, Cajun seasoning, parsley and cheese, blending well.
Pour in a bowl. Serve with French bread toast or toast points.
