Chicken Fried Brown Rice

Light soy sauce, lean chicken, and brown rice make this recipe for fried rice a healthier choice. It's lower in sodium, contains lean protein, and the brown rice is a better source of fiber than white rice.
ingredients
2 tablespoons vegetable oil
8 ounces boneless skinned chicken breast, sliced into strips
1/2 large bell pepper, chopped
1/2 cup green onion, chopped
3 cups cooked brown rice*
2 tablespoons light soy sauce
1 tablespoon rice wine vinegar
1 cup frozen peas, thawed
directions
Heat large nonstick skillet over medium heat. Add 1 tbsp. oil. Add chicken, red pepper, and green onion. Cook 5 minutes until chicken is cooked through. Remove to plate. Heat remaining tbsp. oil in skillet. Add rice, cook 1 minute. Stir in soy sauce, vinegar, peas; cook 1 minute. Stir in chicken and vegetable mixture.

To cook rice, simmer, covered, 1 cup brown rice in 2 1/2 cups water for 45 minutes.

This was delicious! I made a few shortcuts and it was fantastic. I used dried spring onions (dehydrated kind) because I did not have fresh green onions on hand. I also used microwave organic brown rice which saved a great deal of time. I did not use any peppers, but added one egg to the 2nd TBSP of oil before placing the rice in it. Very flavorful--thanks for the recipe!
