Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.


Lots of flavor in this fried rice. It's made with cooked rice, peas, carrots, ham, onion, eggs, and soy sauce. A great way to use up leftover rice and/or ham.
1/4 cup peanut or other cooking oil
4 eggs, well-beaten
1 cup chopped onion
1 box (10 ounce size) frozen peas & carrots, thawed
2 teaspoons salt
4 cups cold, cooked rice
3 tablespoons soy sauce
1/2 cup diced, cooked ham
2 scallions, finely chopped
Heat half of the oil in a wok or deep skillet over medium-high heat.
Add the beaten eggs to the hot oil and cook, stirring constantly, for 30 seconds. Remove from the skillet and chop coarsely.
Add the remaining oil to the wok. When hot, add the onion and cook, stirring constantly, until soft (about 3 minutes).
Stir in the peas and carrots blend and salt. Cook, stirring constantly, for 1 minute.
Add the rice to the wok and cook, stirring constantly, for 2 minutes.
Add the soy sauce, ham, and cooked egg. Mix and cook until the ham is heated through.
Serve immediately, garnished with the scallions.

This was super! I too was afraid that it would be too salty, so I used lite soy sauce. But then it wasn't quite salty enough--lol! So I added a bit more soy sauce on my portion when done cooking.

A very good recipe for fried rice. I didn't add the salt, however, because with the ham and soy sauce (and I used low sodium) I was pretty sure there'd be enough salty flavor. I would recommend holding off adding any salt until you've tasted the final product. The ham I had was cold so I added it with the peas and carrot mixture so it had time to warm up.
