Healthy Fried Rice

This recipe for fried rice adds a healthy twist. It uses brown rice instead of the usual white rice and it uses light soy sauce, which has less sodium than regular. You can also easily tailor this recipe to suit your tastes by changing up the vegetables or adding some lean protein to make it a main dish.

ingredients

1 tablespoon olive oil
3 large eggs, beaten
1/2 cup water
1 package (16 ounce size) frozen stir-fry vegetables, thawed
1/4 cup lite soy sauce
1 low sodium chicken bouillon cube
2 cups cooked brown rice
2 tablespoons finely minced scallions or chives
1/8 teaspoon black pepper

directions

Heat the olive oil in a skillet over medium-high heat. Add the eggs and cook, stirring constantly, until the eggs are scrambled. Remove the eggs from the pan and set aside.

Add the water, vegetables, soy sauce, and bouillon cube to the skillet. Bring to a boil. Stir the brown rice into the skillet. Cover the skillet and turn off the heat. Let stand for 5 minutes.

Fluff the rice with a fork. Stir the scrambled eggs into the rice. Add the scallions and black pepper.

Serve hot.

    Served this as a side dish. But with the veggies and extras, it would do fine as an entree item. Quite good!

    I've been making a variation of this for the last couple weeks. I really think this meal has a ton of potential - it's easy to change things up (for example I usually go with broccoli chicken and peas) The most common complaint I've heard is that it 'needs more salt'..but not so much that the people that suggested this bothered to add salt to it :) (I prefer to allow others to salt and pepper themselves most of the time) Anyhow, I'm trying to perfect this as it is incredibly versatile and inexpensive.
