Oven Fried Rice

This is a fix it and forget it style fried rice recipe. It tastes like your favorite Chinese fried rice but it's baked in the oven instead. Tip: If you want it to taste even more like real fried rice, scramble an egg and stir it in just before serving the rice.

ingredients

2 cups raw long-grain rice
4 cups water
1/4 cup oil
1/2 cup finely chopped onion
1/2 cup finely chopped green bell pepper
2 tablespoons soy sauce
1 envelope onion soup mix
1 can (4 ounce size) sliced mushrooms, undrained

directions

Preheat the oven to 350 degrees F.

Combine all the ingredients in a baking dish. Cover the dish and bake at 350 degrees F for 90 minutes or until the rice is tender.

Remove the baking dish from the oven and let stand for 5 minutes. Fluff the oven-fried rice with a fork and serve immediately.

For an authentic "fried" taste, try frying the onion and bell pepper in a skillet until golden before adding them to the rice mixture.

Try adding different vegetables, such as peas, carrots, or corn, for variety.

If you prefer a less oily dish, reduce the oil to 2 tablespoons and add a bit of chicken or vegetable broth for moisture.

To boost the umami flavor, a tablespoon of oyster sauce or hoisin sauce can be mixed in along with the soy sauce.

Adding a pinch of crushed red pepper flakes or a few drops of hot sauce can give the dish a spicy kick.

For a richer flavor, replace the water with low sodium chicken, beef, or vegetable broth (the onion soup mix contains a lot of sodium already).

    • You could make the recipe (completely) and reheat it. You might need to add more liquid when reheating if it dries out too much.
