Basic Fried Rice

This is a great recipe for learning how to make a basic fried rice. It uses simple ingredients but has all the right flavors. You can vary the vegetables if you wish but use them in the same quantity as called for in the recipe.

1 cup uncooked long grain rice
3 tablespoons oil
2 eggs
3 tablespoons soy sauce
1 cup frozen peas and carrots, thawed

directions

Bring a pot of water to a boil, adding a few pinches of salt. Add the rice and cook at a boil for 15-20 minutes or until the rice is tender. Drain the rice well in a colander then rinse with cold water until cool to the touch.

Line a baking sheet with plastic wrap. Spread the cooked rice on the baking sheet in an even layer. Place in the refrigerator for 20 minutes or until well chilled.

When ready to cook, heat the oil in a wok over medium-high heat. Add the eggs and quickly scramble.

Stir the chilled rice and soy sauce into the eggs and cook, stirring constantly, for 2 minutes.

Add the peas and carrots. Cook, stirring constantly, for 1 minute or until the vegetables are heated through and the eggs are cooked.

Serve the fried rice immediately.

    I add some protein - usually some kind of leftover meat (ham, pork, chicken) and if I have leftover rice I use that instead of making fresh but this is a really good basic recipe for fried rice to get you started.

    I cook the eggs and remove. I usually use shrimp. When I peel shrimp I put peeling in glass measuring cup with 2 tbls soy sauce and microwave 20 seconds. Cover with plastic wrap. I poke holes in it and pour on after rice and veggies have sauteed. Then I stir in sliced up egg and serve.

    This recipe is a great introduction to learning how to make proper fried rice. The cold rice is VERY key which is why you often see recipes calling for leftover rice. If you don't have leftover rice this recipe has the proper method for making it fresh and properly cooling it to use in fried rice. The only thing I do differently is to stir fry the cold rice in some of the oil then push it to the edges and then add the egg.

    This was really good. The only thing I did differently was I added 4 chopped scallions and cooked them with the eggs then added the rest of the ingredients. Very tasty!
