Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Sausage and Refried Beans Breakfast Burritos

ingredients
6 ounces breakfast sausage
1 3/4 cup refried beans
1 tablespoon butter or margarine
8 eggs, lightly beaten
8 burrito-size flour tortillas (10-inch), warmed
1/2 cup shredded mild cheddar cheese
1/4 cup chopped tomato
1/4 cup chopped green bell pepper
16 ounces thick and chunky salsa
directions
Cook sausage in large skillet over medium-high heat, stirring to break into pieces, for 4 to 5 minutes or until no longer pink; drain. Stir in beans; heat for 3 to 4 minutes. Remove from skillet; keep warm.
Melt butter in medium skillet over medium heat. Add eggs; cook, stirring constantly, for 3 to 4 minutes or until eggs are of desired consistency.
Top each tortilla evenly with sausage mixture, eggs, cheese, tomato and bell pepper; fold into burrito. Serve with salsa.

These were very good! Sometimes I get a craving for refried beans, and was glad that I chose this recipe to get my fix. I didn't want the green peppers to be raw-crunchy, so I softened them up in the meat-bean mixture, along with some onions that I added. Oh and, we didn't eat them for breakfast, we ate them for dinner!
