1 large egg
2 teaspoons water

1 teaspoon margarine
1/2 English muffin, toasted
1 slice processed cheese, cut into triangles
1 tablespoon prepared salsa
In small bowl, beat egg, water and green onion.
In small skillet, melt margarine; add egg mixture. Cook and stir until egg is set. Spoon egg mixture onto muffin; top with cheese.
Place on baking sheet; broil until cheese begins to melt. Top with salsa. Garnish as desired.

I was looking for a quick and easy breakfast recipe for Brent to try. He likes scrambled eggs but wanted something with some carbs. Perfect recipe! The salsa spices things up nicely. Add desired seasonings to taste (the cheese is a bit on the salty side but I thought the eggs could use some salt as well)
