Bacon Egg And Cheese Sandwich

There may be no breakfast sandwich better than the bacon, egg and cheese, but this one takes it to a whole new level. Caramelized onions and feta transform a breakfast staple into an elegant, brunch-worthy masterpiece.

ingredients

1 1/4 teaspoon olive oil
1/4 cup sliced purple or white onions
2 eggs
salt and pepper
Dijon mustard
2 slices bread or split croissant or toasted english muffin, lightly toasted
3 slices bacon, cooked and drained
shredded parmesan cheese (as desired)

directions

Heat the olive oil in a skillet over medium heat. Add the onions. Cook, stirring frequently, until soft and almost caramelized. Remove the onions with a slotted spoon and set aside.

In the same skillet, add the eggs and fry to desired doneness. Sprinkle with salt and pepper.

Spread the bread or english muffins with the Dijon mustard.

Place the bacon on the bottom slice of bread or muffin. Top with the fried eggs. Place the cooked onions on top along with the Parmesan cheese. Top with top piece of bread or muffin.

Serve immediately.
