A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.
Tenderloin Steaks with Herb Cheese Topping

ingredients
4 beef tenderloin steaks
2 tablespoons cream cheese
4 teaspoons blue cheese
4 teaspoons plain low fat yogurt
2 teaspoons onion
1 dash white pepper
1 clove garlic
1/2 teaspoon salt
2 teaspoons parsley
directions
Combine cream cheese, blue cheese, yogurt, onion and pepper. Set aside.
Rub each side of beef steaks with garlic. Place steaks on a rack in broiler pan so surface of meat is 2 to 3 inches from heat. Broil for 5 to 6 minutes. Season with salt.
Turn and broil another 3 to 4 minutes. Season with remaining salt.
Top each steak with an equal amount of reserved cheese mixture. Broil an additional 1 to 2 minutes.
Garnish with parsley.
NOTE: Recipe may also be prepared using 1 pound beef top loin steaks cut 3/4 inch thick.
