This slow cooker pepper steak is the perfect weeknight meal Tender beef is simmered in a savory sauce with peppers, all in the slow cooker. Just set it and forget it and dinner will be ready when you are!
2 pounds round steak, cut in strips
2 tablespoons oil
1/4 cup soy sauce
1 sliced onion
1 clove garlic, minced
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground ginger
1 cup beef broth
1 large red bell pepper, sliced
1 large green bell pepper, sliced
1/2 cup cold water
1 tablespoon cornstarch
cooked rice
Brown beef in the oil. Combine beef, soy sauce, onion, garlic, sugar, salt, pepper, ginger, and beef broth in crock pot. Cover; cook on low for 5-6 hours. Stir in peppers; cook for one more hour.
Combine cornstarch and water; stir into crock pot. Turn heat to high and cook for 20-30 minutes or until sauce is thickened.

I loved it, my family loved it. Tender and tasty. I made this recipe with two additions. I added more peppers and approximately 3 cups of beef broth because there just wasn't enough juice. The picture was very deceiving. Still the best pepper steak I've ever eaten. Thank you, simply delicious!
You really shouldn't need that much liquid if your crock pot lid fits properly. The liquid that is added will create steam. Also, this isn't a stew so you don't want the meat swimming in liquid.

This is a great recipe. However, I combined everything (except for the water and cornstarch) and cooked it all on low for about 4 hours. Then added the cornstarch/water and cooked for another 1/2hour.
