No, not well-done... but well done! As in, a job well done. This steak will turn out exactly how you love it... every time.

ready in:
  under 30 minutes

ingredients

butter (or veg oil, or rendered steak fat trimmings, or cooking spray)
steak

directions

Heat just enough butter in a heavy skillet to keep steak from sticking. (I usually just grab a stick and rub it over the bottom of the pan as it preheats).

Quickly brown both sides of steak over medium high heat. Cover and reduce heat to low. Cook covered until steak is as done as you like it.

recipe tips

Preheat the skillet before adding the steak for a good sear.

Do not overcrowd the skillet; cook in batches if necessary.

Flip the steak only once to get a good crust.

Use tongs to flip the steak to avoid piercing it and losing juices.

Let the steak come to room temperature before cooking.

Experiment with different cuts of steak to find what you like. We're partial to ribeye or NY strip, but you also can't go wrong with a filet mignon.

Enjoy your steak with a sauce like bearnaise or peppercorn if sauces are your thing.

Remember, cooking times may vary based on the thickness of the steak and the type of skillet used.

common recipe questions

How do I choose the right steak for this recipe?

Select a steak with good marbling, like a ribeye or sirloin.

Can I use a non-stick skillet?

Yes, you can use a non-stick skillet, but a heavy skillet like cast iron is preferred for even heat distribution or stainless steel. You also don't want to heat a non-stick too hot as it can harm the non-stick surface.

How long should I cook the steak for a well-done doneness?

For a well-done steak, cook for about 4-6 minutes per side, depending on the thickness of the steak. But really, do you want to cook it to well done? Medium rare is about 2-3 minutes per side, which is the most common way steaks are cooked. Some restaurants will not cook a steak to "well" which should tell you if that's the way you like your steak you should probably be eating something else.

Is it necessary to cover the steak while cooking?

Covering the steak helps to cook it evenly and retain moisture, especially if you are cooking it past medium-rare.

Can I add seasonings to the steak?

Yes, you can season the steak with salt, pepper, and other seasonings of your choice before cooking.

Can I cook the steak without any fat?

It's recommended to use some form of fat to prevent sticking and add flavor.

What can I use instead of butter?

You can use vegetable oil, rendered steak fat trimmings, or cooking spray.

How should I rest the steak after cooking?

Let the steak rest for about 5 minutes after cooking, loosely tented with foil, to allow the juices to redistribute.

Can I use a grill pan?

Of course, a grill pan can give the steak nice visual appeal. Use a cast iron grill pan for best results.
