Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Swabian Braised Steak (Schwiibischer Rostbraten)

ingredients
6 small club steaks, about 1" thick
1/4 pound sweet butter
salt and pepper
3 medium onions, chopped
sauerkraut, cooked
spatzle, sauteed in butter
bacon, diced and fried
6 small bratwurst or link sausage, fried
directions
Pound steaks lightly, flattening them just a little.
Heat butter in a large heavy skillet and when bubbling subsides, brown steaks for 3 or 4 minutes on each side if you like them rare, 5 or 6 minutes for medium to medium well done.
Remove to a heated platter and fry chopped onions in same butter until golden brown. Sprinkle steaks with salt and pepper and top with fried onions.
Arrange sauerkraut on one side of platter and Spatzle on the other. Top the sauerkraut with a sprinkling of bacon and the sausages.
