Lean sirloin steak is coated with a spicy-sweet rub made from brown sugar, cumin, and chili powder. Once seared to perfection, it's served with a chipotle sauce for an extra bit of heat and flavor.
1 tablespoon light brown sugar
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound top sirloin steak
2 teaspoons olive oil
1 cup reduced-sodium beef broth, divided
1 tablespoon tomato paste
1 chipotle chile, canned in adobo sauce, minced
1 tablespoon canned adobo sauce
1 tablespoon all-purpose flour
Combine the brown sugar, chili powder, cumin, salt, and pepper in a bowl and mix well. Rub all sides of the steak with the mixture.
Heat the olive oil in a large skillet over medium-high heat. Add the steak and cook for 3-4 minutes per side or until desired doneness. Remove the steak from the skillet and place on a serving platter. Cover lightly with foil.
Add 3/4 cup of the beef broth, the tomato paste, chipotle chile and sauce to the skillet and stir well.
Whisk together the flour and remaining beef both in a small bowl. Stir the flour mixture into the skillet and cook, stirring constantly, until the sauce thickens.
Slice the steak against the grain and place on individual serving plates. Drizzle with the chipotle sauce or serve the sauce on the side. Serve immediately.

I used more tomato paste instead of the adobo sauce so it wouldn't be too hot (DH loves hot food but I don't as much). He of course thought the sauce could have used more adobo haha!! I really did like the rub on the steak. I ate some steak before putting the sauce on and could have just eaten it with the rub. It's more sweet than spicy I think but had just a hint of the heat from the chili powder. I will definitely make this again and make the full strength chipotle sauce for my husband and just eat my steak with the rub!

This spicy steak was fantastic! The rub on the steak itself has a hint of heat and sweet. The chipotle sauce is hot and smoky but yet doesn't totally overpower the dish. You do have to like hot and spicy food to love this dish (which we do!).
