1/4 pound butter
2 limes, juiced
1 teaspoon garlic powder
1/2 cup burgundy wine
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon monosodium glutamate (i.e., MSG; optional)
1 teaspoon Tabasco sauce
salt and pepper, to taste
3 pounds porterhouse steak, 2-inches thick
directions
Combine all ingredients except steak in a saucepan and simmer for 3 minutes. Let cool to room temperature.
Pour over steak and marinate for 1 to 2 hours, turning steak every 15 minutes.
Cook under the broiler or over hickory chips and charcoal. For best results, baste often with sauce.
