It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Seasoned pork chops are topped with spicy potatoes and salsa for the easiest Tex-Mex dinner you'll cook this week.

4 pork chops (1/2-inch thick)
1 package (1.25 ounce size) taco seasoning mix
4 cups refrigerated diced potatoes
2 tablespoons vegetable oil
1 jar (16 ounce size) salsa
Sprinkle the pork chops with some of the taco seasoning mix. Combine the remaining seasoning mix and potatoes in a zip-top bag. Seal and shake to coat the potatoes evenly.
Heat the oil in a large skillet over medium-high heat. Add the pork in a single layer. Cook for 3 minutes per side.
Top each pork chop with a portion of the potatoes. Drizzle the salsa over all.
Reduce the heat to low. Cover the skillet and cook for 12-15 minutes or until the pork is cooked through and the potatoes are heated. Serve the pork chops with the potatoes and salsa.

This is ok. May need another brand of salsa to kick it up a notch. We will eat the leftovers but I don't plan on making it again.
