Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.


Thick pork chops are pan-seared and then simmered in a sauce made of mushrooms, thyme, and your favorite beer.
4 boneless pork center loin chops (1 1/2 inch thick)
2 tablespoons flour
1 tablespoon butter or margarine
4 ounces mushrooms, sliced
1/2 teaspoon dried thyme
8 ounces beer, room temperature
Melt butter in a large nonstick skillet over medium-high heat. Lightly flour chops and brown quickly on both sides. Remove, add mushrooms and thyme and saute 1 minute. Return chops to skillet, add beer and bring to boil.
Cover and simmer for 12 to 15 minutes.

I doubled the amount of the mushrooms because I loved the idea of them simmering in the beer (wish I had tripled them!). Very simple!

Simple and tasty! I used larger pork chops (butterflied, about 1" thick) so my cooking time was a bit longer but they came out tender and flavorful. Use a good quality beer.
