ingredients
2 boneless butterflied pork chops
2 tablespoons pork seasoned coating mix
1 large plum tomato, chopped
1/4 cup sun-dried tomato dressing
1/2 cup shredded mozzarella cheese
directions
Preheat oven to 425 degrees F.
Coat chops with coating mix as directed on package. Place on baking sheet sprayed with cooking spray. Bake 20 minutes or until chops are cooked through (160 degrees F).
Meanwhile, combine tomatoes and dressing; spoon over chops. Sprinkle with cheese. Bake an additional 5 minutes or until cheese is melted.
