A great way to use up leftovers. Combine your choice of pork, chicken, or shrimp with fried rice, water chestnuts, and vegetables.

1 package (6.2 ounce size) fried rice mix
1 can (8 ounce size) sliced water chestnuts, drained
1/3 cup frozen peas
1/3 cup sliced green onions
2 cups chopped cooked pork, chicken, or shrimp
3/4 cup coarsely shredded carrot
chow mein noodles (optional)
Prepare the rice in a large skillet as directed on the package.
Add the water chestnuts, peas, and green onions. Let cook, covered, for 5-7 minutes.
Stir in the cooked pork and shredded carrot. Cook until heated through. Stir in the chow mein noodles, if using, and serve immediately.
