Skip the oil but get the same great fried texture with this air frying technique. The result is a crisp coating and tender pork chops. We published this recipe long before air fryers were invented so no need to buy a special kitchen appliance just to make it!
1/2 cup Dijon mustard
4 pork loin chops (3/4-inch thick)
1 cup Italian bread crumbs
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
Preheat the oven to broil.
Spread the mustard evenly on both sides of the pork chops.
In a shallow dish, combine the bread crumbs, salt, black pepper, and cayenne. Dredge the pork chops in the crumbs so both sides are evenly coated.
Oven Directions: Place the pork chops on a wire rack set over a baking sheet. Place the sheet in the oven about 4 inches from the heating element.
Cook, turning once, until the pork chops are golden brown (about 5 minutes per side). Remove from the oven and serve immediately.
Air Fryer Directions: Place the pork chops in the air fryer (in a single layer if possible) and cook at 400 degrees F for 8-10 minutes per side or until cooked through.
For even cooking and browning, make sure the pork chops are at room temperature before you start cooking them.
If using an air fryer, avoid overcrowding the basket to allow air to circulate freely around the pork chops for an evenly crispy coating.
Spraying a light coat of cooking spray on the breaded pork chops before cooking can help achieve a more golden and crispy exterior.
If you're sensitive to spice, you can adjust the amount of cayenne pepper in the breadcrumb mixture or omit it altogether.
To add more flavor to the breadcrumb coating, try mixing in some finely grated Parmesan cheese with the breadcrumbs.
Remember to clean your air fryer or oven rack and baking sheet promptly after cooking to avoid any baked-on residue from the mustard and breadcrumbs.

I actually air fried these. 400° 12 minutes on each side for bone in pork chops. I added a teaspoon of paprika for overall color which worked very well and I sprayed each pork chop with olive oil on both sides before placing in the air fryer.

I followed the recipe as written. It was delicious. I did use an Air Fryer. It only went to 390 degrees, so I extended the cook time to about 8 minutes per side. Next time I will spray the basket because the coating came off of the chops, but they were still really good.

Good recipe. I like the not-fried idea and I'd say it has a pretty close texture to real frying. I think this would work well with chicken too.

I didn't change a thing and this was one of the best pork dishes we have ever eaten!! Loved it. The mustard kept the moisture in and therefore the pork was yummy.
