Slow Cooker Country Ham

ingredients
1 1/2 pound boneless ham
1/4 cup brown sugar
1/2 teaspoon mustard
1 can (6 ounce size) pineapple slices or chunks
2 sweet potatoes, cut in quarters
directions
Place sweet potatoes in the crockpot to form a rack. Put the ham on top of the potatoes.
In a bowl, mix sugar, mustard, and a little pineapple juice. Pour over ham along with the rest of the pineapple.
Cook on LOW 6 to 8 hours.

I made this for Easter dinner, except that I used a 2.5 pound boneless ham. It was good, probably not anything someone would rave about, but the ham was juicy and the sweet potatoes were tasty. I did baste it quite often since when originally added, most of the juice and brown sugar/ mustard ran off.
