Simple syrup is... simple. It's simply made with sugar and water and is used to sweeten cold drinks or cocktails where sugar won't easily dissolve.


4 cups white sugar
4 cups water
Combine the sugar and water in a large, heavy saucepan over medium-high heat. Bring to a boil and let cook for 1 minute or more, stirring constantly, until the sugar dissolves completely.
Let cool then store in an airtight container in the refrigerator for up to 1 month.
To make flavored simple syrup, try adding to the saucepan: 2 split vanilla beans, 2 cups fresh coarsely chopped mint leaves, 2 sliced (with or without seeds) jalapenos, or the zested rind of 1 orange. Strain the syrup when it is cool, then store as directed.
