1 1/2 pound chicken tenders 2 tablespoons dried Italian seasoning 1 teaspoon garlic salt 1/2 cup finely grated Parmesan cheese 1/2 cup instant mashed potato flakes (dry) 1/4 cup olive oil
directions
Preheat the oven to 375 degrees F. Grease a 9x13-inch baking dish.
Place the Italian seasoning, garlic salt, Parmesan, and dry potato flakes in a shallow dish and mix well. Coat the chicken in the olive oil, letting any excess drip off, and then roll in the coating mixture, making sure to heavily coat the chicken. Place the chicken in the baking dish in a single layer, leaving some room between the pieces if possible.
Place the baking dish in the oven and bake at 375 degrees F for 12-15 minutes, turning the chicken over halfway through the cooking time. Cook until the chicken is cooked through and golden brown.
Remove from the oven and serve the crispy chicken tenders hot with a dipping sauce or gravy, if desired.
