Apricot Glazed Turkey Burgers With Apricot Salsa

ingredients
1 pound ground turkey breast
2 teaspoons chopped fresh thyme
1/2 teaspoon salt
1/2 cup apricot jam
APRICOT SALSA
4 medium apricots, pitted and chopped
OR
3 cups frozen sliced peaches, thawed and chopped
1 medium red bell pepper, chopped
1 small red onion, finely chopped
2 tablespoons chopped fresh parsley
2 tablespoons white vinegar
1 tablespoon vegetable oil
1/4 teaspoon salt
salad greens, if desired
directions
Prepare Apricot Salsa (below).
Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.
Mix turkey, thyme and salt. Shape mixture into patties, about 3/4 inch thick.
Cover and grill patties 4 to 5 inches from MEDIUM heat for 12 to 15 minutes. Turn and brush patties with apricot jam after 6 minutes, then cook for remaining time until no longer pink in center. Discard any remaining jam.
Serve burgers with Apricot Salsa.
APRICOT SALSA: Mix all ingredients. Cover and refrigerate until serving. Serve salsa generously on salad greens.
