Ingredients:
1 teaspoon cooking oil -- as needed
2 tablespoons onion -- finely chopped
1/2 cup cooked corned beef -- finely chopped
1 small baked potato, cooled -- 1/4" dice
1 pinch thyme -- to taste
salt -- to taste
black pepper -- to taste

Directions:

Sauté onion in oil until translucent. Do not brown.

Add remaining ingredients, stir to mix well and cook over low heat 5 to 10 minutes, stirring occasionally.

Serve immediately while still hot.

VARIATION: Use leftover roast beef rather than corned beef. Vary seasonings to taste.
