Corned beef hash is a great use of not only leftover corned beef, but leftover baked potatoes as well. For a real treat, throw a fried egg on top.

ingredients

1 teaspoon cooking oil
2 tablespoons chopped onion
1/2 cup cooked and diced corned beef
1 small baked potato, cut in 1/4-inch dice
1 pinch dried thyme, to taste
salt and black pepper, to taste

directions

Heat the oil in a skillet over medium heat. Add the onion and cook for 2-3 minutes or until soft but not browned.

Stir on the corned beef, potato, thyme, salt, and pepper. Cook, stirring frequently, for 5-10 minutes or until the potato is lightly browned and the corned beef is heated through.

Serve hot.
