Slow Cooker Mexican Meat Loaf

ingredients
1 egg, beaten
1/3 cup taco sauce
1 cup coarsely crushed corn chips
1/3 cup shredded Mexican cheese blend
2 tablespoons taco seasoning mix
1/2 teaspoon salt, optional
2 pounds ground beef
additional taco sauce or salsa
directions
Combine ingredients; mix well. Shape into a round loaf and place in a slow cooker.
Cover and cook on low for 6-8 hours or until a meat thermometer reads 160 degrees F. Serve with additional taco sauce or salsa.

This is one of the better slowcooker meatloaves that I have tried. Use leaner beef so it doesn't get too greasy.

My husband was doubtful that this recipe would be to his liking. He can be very picky some times. However, he thought it was very good & would like to have it again! I did add a little chopped onion & chopped garlic when mixing. Just before it was done cooking I added shredded Mozzarella cheese on top. I thought it was delicious!
