ingredients
1 pound ground beef
1 cup crushed Doritos
1 egg, beaten
1 envelope taco seasoning mix
1 1/2 cup shredded Colby/jack cheese, divided
1 1/2 cup salsa, divided
1/2 can refried beans
directions
Combine first 4 ingredients, 1/2 cup of the cheese, and 1 cup of the salsa.
Form mixture into a loaf and place in a greased loaf pan. Spread refried beans over the top of the meat loaf. Drizzle remaining salsa over top.
Bake in 400 degree F oven for 50 minutes, or until internal temperature reaches 160 degrees F. Sprinkle remaining cheese on top. Bake additional 5 minutes to melt the cheese.

We loved it. The flavors exploded in your mouth. There are so many ways you can add to the recipe to make it your own. Sour cream topping after baking is wonderful, and we plan to add a black bean salsa next time.

This was so delish. I doubled the recipe and made a couple minor additions. I made my own salsa, added a drained can of diced tomatoes w/ green chilis and half can drained black beans to the hamburger mixture. I skipped the beans on top. Baked for an hour, topped with a little cheese, baked until it melted, then devoured 2 full loaves between 7 people. This is a definate repeat meal. Thanks so much for sharing.

Super easy to make, and I will make it again! I used my own salsa recipe, added chopped onion, green pepper, and a sm. can of corn. Sinced I used a spicer Doritos, I didn't use a full envelope of the Taco Seasoning. I LOVED it! I'll definately make it again!

I love this Mexican Meatloaf. I add a whole onion, a green pepper, and Chorizo Mexican sausage or a 1/4 lb. of pork sausage to mine. I serve it with refried beans and extra salsa an d sour cream on the side. Yum!

This is a really a good recipe...I use spicy doritos and a little less taco seasoning because I dont like to much of it. My family loves it...I dont care for meatloaf but really like this.
