Easy Baked Chicken And Potato Dinner

ingredients
4 chicken breast halves without skin, bone-in
4 russet potatoes, unpeeled, 1" cubes
1 green bell pepper, 1-1/2" cubes
1 onion, cut in 8 wedges
2 tablespoons margarine, melted
1/4 cup Parmesan cheese, grated
1 teaspoon garlic powder
1 teaspoon paprika
directions
Heat oven to 400 degrees F. Spray 15x10 inch baking pan with nonstick cooking spray.
Place 1 chicken breast half in each corner of sprayed pan. Place potatoes, bell pepper and onion in center of pan.
Pour melted margarine over chicken and vegetables; sprinkle evenly with cheese, garlic powder, and paprika.
Bake at 400 degrees F for 30-35 minutes, or until chicken is fork-tender and juices run clear, stirring vegetables once halfway through cooking.

I used boneless chicken because that's what I had. I added a little black pepper and salt but otherwise left it as is and it was quite good. A nice "one dish" meal.

this was very easy and very good, even though i didn't have green bell peppers. the potatoes came out perfect and were my favorite, i added a pinch of garlic salt on the chicken before eating cause it was lacking a little flavor. i will make this again.
