Cubed boneless chicken is mixed in a slow cooker with dry Ranch salad dressing mix, cream of chicken soup, and sour cream.
20 ounces potatoes, peeled and cubed
1/4 cup finely chopped onion
1 pound boneless, skinless chicken breasts, cubed
1/2 package (1 ounce size) dry Ranch salad dressing mix
1 can (10 ounce size) 98% fat free cream of chicken soup
1/4 cup fat-free sour cream
salt and pepper, to taste
Combine the potatoes, onion, and chicken in the crock pot. In a bowl, combine the ranch dressing mix, soup, and sour cream and mix until smooth. Pour over the chicken and vegetables. Add salt and pepper as desired. Stir to combine.
Cover the crock pot and cook on low for 6 hours or until the chicken is cooked and the potatoes are tender.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
