ingredients
4 chicken breasts, halved, boned and skinned
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons prepared mustard
1 egg
1/4 cup grated Parmesan cheese, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons grated Parmesan cheese
1/4 cup bread crumbs or ground oatmeal
non-stick cooking spray
directions
Sprinkle chicken breasts with salt and pepper.
Combine mustard and egg, beating until well blended.
Combine cheese and bread crumbs. Dip chicken in egg mixture, then roll in bread crumb mixture. Let stand at room temperature on wax paper for 10 minutes to set coating.
Transfer chicken to rack of roasting pan coated with cooking spray. Bake at 400 degrees F for 40 minutes or until chicken is done and coating is lightly browned.
