Sirloin steaks are coated with a sugar and spice rub made with salt, pepper, garlic powder, and granulated sugar before grilling.

3 pounds top sirloin steak, about 1" thick
Sugar and Spice Rub
1 teaspoon salt
1 teaspoon freshly cracked black pepper
1/2 teaspoon garlic powder
2 1/2 tablespoons sugar
Combine the sugar and spice rub ingredients in a small bowl. Rub one side of the steak with half the rub mixture. Let sit at room temperature for 1 hour.
While the steak is sitting, prepare a fire in a charcoal grill. Spread the remaining rub on the other side of the steak and let it sit at room temperature for at least 30 minutes.
When the coals are medium hot, grill the steak for 4 minutes on each side for rare, 5 minutes for medium rare. Let the meat sit for 5 minutes before slicing.

I was sure there'd be too much sugar in this recipe but I guess the other ingredients balanced it out because it was amazing!!
