Pineapple-Pomegranate Star Anise Soda Cocktail

ingredients
2 star anise
1/4 cup sugar
1/4 cup water
2 cups pineapple juice, chilled
2 cups champagne or sparkling white wine
pomegranate juice, chilled (as desired)
directions
Star Anise Syrup: Place sugar, water and star anise in a small pot. Heat over medium until the sugar has completely dissolved. This can be made in advance.
To assemble: In your serving glass or a pitcher, combine pineapple juice and champagne. Add star anise syrup to taste. Add pomegranate juice for color. Serve.

The star anise simple syrup mixture wasn't really detectable with the delicious flavors on the pineapple and champagne. Even the pomegranate was sort of lost (but the color was beautiful!). This drink, however, was a hit. It's very light and refreshing because of the champagne. Would be a great drink for the holidays because of the color (and great for New Year's Eve served as a drink or punch).
