INGREDIENTS:

3 eggs, slightly beaten
14 finely crushed saltine crackers
1/2 cup tomato juice
2 tablespoons chopped onion
1 tablespoon prepared horseradish
1/2 teaspoon salt
1/8 teaspoon black pepper
1 1/2 pound ground ham
1 pound boneless pork shoulder, trimmed and ground
***MUSTARD SAUCE***
1/2 cup brown sugar
2 tablespoons vinegar
1/2 teaspoon dry mustard


DIRECTIONS:

In mixing bowl, combine eggs, cracker crumbs, the tomato juice, onion, horseradish, salt and pepper. Add ham and pork; mix well.

Shape in a 9x5" loaf in a shallow baking dish. Bake at 350 for 1-1/4 hours.

Meanwhile, prepare Mustard Sauce. Drain fat from ham loaf; pour Mustard Sauce over. Bake 30 minutes more, basting with sauce occasionally.

MUSTARD SAUCE: In mixing bowl, thoroughly combine brown sugar, vinegar, and dry mustard.
