Smoky Stuffed Peppers

Bell peppers are stuffed with Italian-style turkey sausage, tomatoes, brown rice, and smoked cheese.

ingredients

6 large bell peppers
12 ounces hot Italian turkey sausage links, removed from casings
1 1/2 cup reduced-sodium chicken broth
4 plum tomatoes, chopped
1 1/2 cup instant brown rice
1/3 cup chopped fresh basil
1 cup finely shredded smoked cheese, such as mozzarella, Cheddar or Gouda, divided

directions

Position rack in upper third of oven; preheat broiler.

Slice the tops of the peppers off and remove the seeds. Place the peppers, cut side down, in a microwave-safe dish.

Add water to the dish to come up 1/2-inch in the dish. Cover the peppers with plastic wrap and microwave on 100% power for 7-10 minutes or until the peppers are just softened. Drain the peppers and transfer them, cut side up, to a roasting pan.

While the peppers are cooking, heat a large skillet over medium-high heat. Add the sausage and cook, breaking the meat up with a wooden spoon, until cooked through, about 5 minutes.

Add the broth, tomatoes, and rice to the skillet. Turn the heat to high and bring to a simmer. Cover, reduce the heat to medium low and simmer until the rice is almost cooked, about 5 minutes. Remove from heat and let stand, covered, until the rice has absorbed the remaining liquid, about 5 minutes.

Stir the chopped basil and half of the smoked cheese into the sausage filling. Divide the mixture among the softened peppers in the roasting pan. Top them with the remaining cheese. Place the roasting pan under the broiler and broil for 2-3 minutes or until the cheese is melted.

    I had to improvise a little. Used ground turkey that I seasoned with crushed red pepper and italian seasonings because I didn't have any of the turkey sausage. I used canned diced tomatoes, dried basil, and I didn't have instant brown rice so I had to modify for regular brown and cooked it longer with more liquid (I added broth). I did get smoked mozzarella though so it did have the wonderful smoky flavor even if I had to punt with the rest of the recipe.

    This was very good but as CD Kitchen found too my brown rice needed more liquid. Must depend on the brand. I added more water as suggested and all was well. I used smoked cheddar cheese but I think I would have liked one of the white cheeses instead like the mozz.

    Wow! This recipe was great! The only thing was that the brown rice I used called for way more liquid than the recipe - so I added more to be on the safe side. The tomatoes will give off some liquid but not as much as the rice needed when I made it. The smoky cheese was a great touch.
