Glazed Thai Mini-Meatloaves

ingredients
1 1/2 pound ground beef round
1 tablespoon garlic, minced
1 cup bean sprouts, chopped
1 cup cilantro, chopped and divided
1/2 cup salted peanuts, chopped and divided
1 tablespoon rice vinegar
1 lime, zested and juiced
salt and pepper, to taste
non-stick cooking spray
1 1/2 cup stir-fry sauce, Thai style
directions
Reserve 2 tablespoons cilantro and 1 tablespoon peanuts.
Blend beef, garlic, bean sprouts, remaining cilantro, remaining peanuts, rice vinegar, lime zest and juice, salt and pepper. Shape into desired size mini-loaves.
Spray large skillet (10 inches in diameter and 3 inches deep) and heat to medium-high. Brown meat loaves, turning to brown all sides.
Reduce heat to medium and pour stir-fry sauce over meat loaves. Reduce heat to medium-low and cook 20 minutes or until internal temperature reaches 170 degrees.
Remove to platter and sprinkle with reserved cilantro and peanuts.
