Easy Mexican Meat Loaf

ingredients
1 pound ground beef
1 cup dried breadcrumbs
1 cup salsa
1 cup finely chopped onions
1 large egg, lightly beaten
1/2 cup shredded cheddar cheese
1 teaspoon garlic powder
directions
Preheat the oven to 350 degrees F.
Combine the ground beef, breadcrumbs, salsa, onion, egg, cheese, and garlic powder in a bowl. Mix well to combine (do not overwork the meat or it may end up crumbly).
Shape the meatloaf into an 8x4-inch loaf and place in a shallow baking dish (or loaf pan).
Place the pan in the oven and bake for 1 hour at 350 degrees F or until fully cooked in the middle.
Serve hot.
If desired, you can spoon some additional salsa over the top of the meatloaf before cooking.

This was really a great recipe. The only change I made was to substitute 1 tsp. taco seasoning for the 1 tsp. garlic powder. It was moist, tasty and my husband loved it. I also used 2% milk cheese instead of whole milk cheese.
