Scrambled eggs, sausage, salsa, and cheese are piled into crispy taco shells. A delicious and simple breakfast.

4 eggs, beaten
1 cup shredded Colby cheese
1/2 cup cooked crumbled sausage
1/3 cup chunky salsa
4 taco shells
Preheat oven to 350 degrees F.
Combine the eggs, cheese, sausage, and salsa in a small bowl.
Place the taco shells on a baking sheet and heat at 350 degrees F for 4-5 minutes.
Meanwhile, heat a nonstick skillet over medium heat. Add the egg mixture and scramble until just set (should be moist still).
Spoon the egg mixture into taco shells and serve. You can top with additional cheese or salsa if desired.

Simple and good. My kids loved it and it took no time at all. I did use soft tortillas only because that's what I had on hand. I'll buy the hard shell ones next time because my kids love those.

Loved the flavor and simplicity of this recipe. I'm always looking for new breakfast ideas and this was perfect. My only comment would be that scrambling all the ingredients together makes the color a little less appealing. My suggestion would be to scramble the eggs and sausage until firm and then stir in the salsa and cheese and let heat through.
