It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


1 tablespoon olive oil
1 1/4 pound ground brisket (or ground sirloin)
1 piece (1 inch size) fresh ginger, peeled and grated
3 cloves garlic, grated
4 scallions, white and light green parts, chopped (save a few for garnish)
2 teaspoons dried oregano
1 1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 ounces herb cheese spread
6 brined Peppadew peppers (available at finer supermarkets), chopped
4 hamburger buns
In a large bowl, mix ground beef, ginger, garlic, scallions, oregano, salt and pepper with hands just to combine. Make into patties.
In a frying pan or on a stove top griddle, add olive oil and heat. For medium rare, cook for 4 minutes on each side.
While burgers are cooking, mix cheese with chopped Peppadews. When burgers are done, spread each with cheese mixture and top with a few reserved scallions.
Serve on good sesame seed buns.

Used cherry peppers isntead of peppadew. Grilled instead of stove cooked. A little too much ginger for my liking but good otherwise.

I used ground sirloin since brisket costs a lot more where I live. Made this pretty close to how it was written. Used a little less garlic and ginger. Found the peppers at my store which was amazing so I was glad I could include that in the cheese. Very good burgers. Would love to try it using the brisket if it wasn't so expensive.
