Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Cinnamon Bread With Apple Spread

ingredients
2 cups flour
1 cup sugar
4 teaspoons baking powder
1 1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup buttermilk
1/3 cup oil
2 teaspoons vanilla extract
2 eggs, beaten
STREUSEL
2 tablespoons sugar
1 teaspoon cinnamon
2 teaspoons margarine
APPLE SPREAD
8 ounces cream cheese, softened
2/3 cup apple, peeled and finely diced
1 tablespoon powdered sugar
1 tablespoon milk
1/4 teaspoon cinnamon
directions
Heat oven to 350 degrees F. Grease and flour bottom of 9 x 5 or 8 x 4 loaf pan.
In a large bowl, combine all ingredients (except streusel). Beat for 3 minutes at medium speed. Pour into pan.
Combine streusel ingredients until crumbly. Sprinkle over batter and swirl with knife to marble.
Bake for 45-55 minutes until toothpick comes out clean. Cool for 15 minutes. Remove. Serve with apple spread.
For Apple Spread: Combine spread ingredients in a food processor or blender. Process until well mixed, scraping down sides.
Note: Spread does not keep well, so you can use 1/3 cup thick applesauce in place of 2/3 cups fresh apple. Process only briefly. Add additional powdered sugar if necessary to thicken.
