Cinnamon Walnut Swirl Loaf - CDKitchen.com

serves/makes:

ready in:
  2-5 hrs

ingredients

Dough

1 cup milk
1 egg
3/4 teaspoon salt
3 tablespoons sugar
2 tablespoons butter
3 1/4 cups bread flour
1 1/4 teaspoon bread machine yeast

Double Walnut Filling

1 cup chopped walnuts
3/4 cup ground walnuts
1/2 cup sugar
2 egg whites
2 teaspoons water
1 teaspoon cinnamon

directions

Place ingredients for dough in bread machine pan and select Dough Cycle.

Meanwhile, prepare filling: In a saucepan over low heat, combine filling ingredients; cook, stirring 10 minutes or until sugar dissolves. Set aside and allow to cool.

When bread cycle is completed, remove dough to lightly floured board; cover with large bowl and let rest 10-15 minutes. Roll out to 16 x 8 inch rectangle. Spread filling to within 1/2 inch of edges.

Starting at short side, tightly roll like jellyroll. Place in lightly greased 9 x 5 loaf pan. Cover and let rise in warm place for 30 to 45 minutes or until doubled. With long skewer, poke several holes in risen dough. Bake in preheated 325 degrees F oven for 40-40 minutes, or until loaf sounds hollow when tapped.

I was curious as to why you poke holes in the risen loaf. Wouldn't this make it deflate? Thanks.
