In a world full of layered cheesy casseroles, this chicken and rice bake comes to the rescue. Rice, onion, and golden mushroom soup cook with drumsticks and thighs for an awesome all-in-one dish.

1 medium onion, chopped
1 cup uncooked converted rice
1 can (10.75 ounce size) condensed golden mushroom soup
1/2 cup water
4 pieces chicken drumsticks or chicken thighs

directions

Preheat the oven to 350 degrees F. Grease a square (8x8 or 9x9) baking dish.

Spread the chopped onion evenly on the bottom of the baking dish. Sprinkle the rice over the onion in an even layer.

Mix the mushroom soup and water until well mixed. Pour 3/4ths of the soup mixture over the rice.

Season the chicken pieces with pepper and place the chicken on top of the rice in an even layer. Drizzle the remaining soup mixture over the chicken.

Cover the pan with foil and bake at 350 degrees F for 60-70 minutes or until the chicken is cooked through.

Serve the mushroom chicken and rice casserole hot.

    Delicious and easy! I used boneless chicken breasts and added thinly sliced tomatoes on top of each chicken breast and some shredded cheese on top when serving.

    We had this for lunch today. It was wonderful. A bit much for just the two of us but I love leftovers. I want to try this again but substitute Pock Chops for the Chicken (although I loved the chicken). This will be a regular at our house.
