ingredients
2 tablespoons oil 4 small boneless skinless chicken breast halves 2 cups water 3/4 cup barbecue sauce 1 cup corn kernels 2 cups instant white rice, uncooked
directions
Heat the oil in a skillet over medium-high heat.
Add the chicken breasts, cover the skillet, and cook for 4 minutes. Remove the cover and turn the chicken over. Cover again and cook for 4 more minutes or until the chicken is cooked through (time will depend on thickness of the chicken). Remove the cooked chicken from the skillet, set aside and keep warm.
Add the water, barbecue sauce, and corn to the skillet. Bring to a boil then stir in the rice. Place the chicken on top of the rice. Cover the skillet, reduce the heat to a simmer, and cook for 5 minutes or until the rice is cooked and the liquid is absorbed.
Quick and satisfying. I had rather thick chicken breast halves, so the cooking time for those was considerably more than 4 minutes per side. Just use your judgment so they don't become dry.
