8 whole mushrooms, about 2 1/2-inches in diameter
2 slices bacon
2 shallots

Wipe the mushrooms with a paper towel to remove any dirt. Remove the stems and finely chop them. Set the stems aside.
Finely chop the bacon and shallots and place in a small, microwaveable bowl. Microwave on high heat for 1 minute. Stir the breadcrumbs, chopped mushroom stems, parsley, salt, and pepper into the bacon. Mix well.
Stuff the mushroom caps with the bacon filling. Sprinkle each with grated cheese and place on a microwaveable plate. Cut the butter into small bits and place on the plate, between the mushrooms. Cover the mushrooms with plastic wrap and microwave on high heat for 2 1/2 minutes or until the filling is heated through and the mushrooms are tender.
Serve hot.
Choose mushrooms that are firm and free from blemishes for the best results.
Experiment with different herbs and spices to change up the flavor of the stuffing.
Add a sprinkle of paprika or crushed red pepper flakes for a spicy kick to the stuffed mushrooms.
For a crispy topping, broil the stuffed mushrooms in the oven for a few minutes after microwaving.
