Have Taco Tuesday any day of the week. Taste the love affair between the beef and chipotle peppers in adobo sauce. Doctor with your favorite toppings and chow down.

2 pounds ground beef, preferably ground chuck
2 cups chopped yellow onion
4 chipotle peppers in adobo sauce, mashed
2 cans (15 ounce size) pinto beans, rinsed and drained
1 can (14.5 ounce size) diced tomatoes with peppers and onions, drained
1 tablespoon beef bouillon granules
1 tablespoon sugar
1 1/2 teaspoon cumin
Place a medium skillet over medium-high heat until hot. Add beef and cook 6 minutes or until just beginning to brown, stirring frequently.
Place beef and accumulated juices and remaining ingredients into slow cooker. Cover and cook on High 2 hours or Low 4 hours.
Serve with taco shells or flour tortillas, with shredded lettuce, salsa, shredded cheese and sour cream.

The best taco we ever had, my wife loved it! A REAL FIND! I enhanced the recipe with a "touch" of red & green ot chili peppers. Fresh Cilantro is a nice addition. This is a wonderful recipe!

These are the BEST taco's I have ever eaten! My very picky husband agrees! This will now be my taco recipe. I added extra chipotle (a whole small can), some garlic powder, and chili powder. I did find a bit liquidy, BUT everything else is fantastic. I highly recommend!
