Slow Cooker Chipotle Taco Filling

Have Taco Tuesday any day of the week. Taste the love affair between the beef and chipotle peppers in adobo sauce. Doctor with your favorite toppings and chow down.

ingredients

2 pounds ground beef, preferably ground chuck
2 cups chopped yellow onion
4 chipotle peppers in adobo sauce, mashed
2 cans (15 ounce size) pinto beans, rinsed and drained
1 can (14.5 ounce size) diced tomatoes with peppers and onions, drained
1 tablespoon beef bouillon granules
1 tablespoon sugar
1 1/2 teaspoon cumin

directions

Place a medium skillet over medium-high heat until hot. Add beef and cook 6 minutes or until just beginning to brown, stirring frequently.

Place beef and accumulated juices and remaining ingredients into slow cooker. Cover and cook on High 2 hours or Low 4 hours.

Serve with taco shells or flour tortillas, with shredded lettuce, salsa, shredded cheese and sour cream.

    The best taco we ever had, my wife loved it! A REAL FIND! I enhanced the recipe with a "touch" of red & green ot chili peppers. Fresh Cilantro is a nice addition. This is a wonderful recipe!

    These are the BEST taco's I have ever eaten! My very picky husband agrees! This will now be my taco recipe. I added extra chipotle (a whole small can), some garlic powder,and chili powder. I did find a bit liquidy, BUT everything else is fantastic. I highly recommend!
