Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.


2 (6-inch) flour tortillas
1/2 cup chunky applesauce, divided
1 teaspoon cinnamon sugar mixture, divided
1/4 cup shredded monterey jack cheese
2 tablespoons vanilla or apple/cinnamon flavored yogurt
Preheat oven to 400 degrees F.
Place on tortilla on an ungreased baking sheet. Spread half of applesauce over tortilla; reserve half for garnish. Sprinkle with half of cinnamon-sugar over applesauce. Top with cheese. Cover with second tortilla. Sprinkle remaining cinnamon-sugar on top.
Bake at 400 degrees F for 6-8 minutes or until golden brown. Cool 2 minutes. Cut into quarters and serve with reserved applesauce and yogurt.

Loved these! They are sweet but not so sweet that you'll feel icky after eating them. I think the cheese helps balance that out. The bottom tortilla didn't get crisp like the top one so I ended up putting the entire quesadilla into a hot skillet to brown the bottom tortilla a bit before serving.
