ingredients

3/4 cup oil
1/4 cup lemon juice
1/4 cup grated Parmesan cheese
2 cloves garlic, finely minced
1/2 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon anchovy paste or mashed anchovies, optional

directions

Place all the ingredients in a jar with a tight-fitting lid and shake vigorously. Store the dressing in the refrigerator and shake well before serving.
